Mode 7 is perhaps the most uniquely SNES aspect of the entire SNES. If I view any Mode 7 effect for more than ten seconds, I feel a profound sense of nostalgia. I'm very curious what everybody's favorite uses of the technology are. Off the top of my head, I'll throw out the city level from Turtles in Time where you fight Super Krang, the rotating level from Super Castlevania IV, and the game Axelay in its entirety.

F-Zero, without a doubt. Super Star Wars uses it well, but other games use it in a way more subtle way, like the Final Fantasy games and Chrono Trigger, etc. But I say F-Zero defines it more than any other.
But yeah, Chrono Trigger and the Final Fantasy games used it the best.

I would have to say that I'm fond of the console's Mode 7 capabilities as well, and I'd like to throw in Super Mario Kart with the mix.

I can't play Super Mario Kart anymore without getting a headache. I find the Mode 7 to be blurry off-putting. F-Zero all the way.

I get the most nostalgia from the mosaic pixelation effect that the SNES was so fond of. I get chills whenever, for example, a DS game uses it.

I think that was done with the SNES's scaling abilites in combination with the SuperFX chip's abilities, not Mode 7.

My understanding is that Yoshi's Island used both Mode 7 and the FX2 chip. I'm not 100% on this, but I'm pretty sure that any time a boss is in the background, it uses Mode 7.

I never had any headaches from Super Mario Kart, but I will concede that comparatively, Mario Kart 64 is the superior game.
F-Zero was a game that I have only recently played on a friend's console, but it is definitely one I wish I owned as a kid. Looking at the respectiveentries within The 100 Best SNES Games Ever list, I am reminded that Super Mario Kart only gave the player a half screen of vision compared to F-Zero's full screen. Considering that, along with F-Zero's aesthetics (the track is much more visble), I have no arguments that F-Zero implemented Mode 7 in a better fashion.
Both are still very enjoyable games, though.

It's aged pretty badly by today's standards, but the train escape sequence from FF6 was impressive to me when I was like seven years old.

As a kid the only game I owned that used Mode 7, that I know of, was Super Mario Kart and I enjoyed the hell out of that game. I do remember renting F-Zero and not enjoying it very much, but that might have been because at 7 or 8 shooting shells and dropping bananas made for a more interesting game.
