For me it comes down to two games.......Castlevania II Simon's Quest and Symphony of the Night.
Symphony of the Night was damn near flawless.......great graphics, control, awesome enemies, and of course, Alucard. One of the most interesting things about this game to me was that each enemy had a unique death animation. The music was great as well, and gave a great atmosphere to each level.
Castlevania II, in my opinion and in spite of its age, captured the atmosphere of Transylvania better than any of the other games (of the ones I've played.) The graphics were top-notch for their time, and held up well even against later games in the NES's lifespan. Of particular note was the music......both the daytime and nightime theme songs were perfectly suited to the graphic scheme, and drove the game along. I always liked the sound it made when you'd whip an enemy.
From what I've been told, Castlevania III could also lay claim to the title of best ever, but unfortunately I never got the opporunity to play that one. Perhaps I should download it.
After careful consideration, I've got to say that CII: Simon's Quest is my favorite, narrowly beating out Symphony of the Night. I have two main reasons for my choice:
1. Although Symphony had incredible graphics and interesting levels, I always kind of wished that the entire game wasn't contained within Dracula's castle. I prefer the outdoor environments of CII.
2. While Alucard is certainly one of the coolest characters ever to appear in a videogame, and I particularly love his ability to transform into a bat and a cloud of mist (the wolf form was pretty much useless, IMO), I still have to say that I'd prefer to be a Belmont.
I recently finished playing Castlevania: Lament of Innocence on Playstation 2. It was a decent game. The main character, Leon Belmont, was cool, and had some really cool moves. The voice acting in the game was superb, and while the storyline was easily predicable, it was solid. The biggest problem with the game is that the environments in the game were very bland. Although the graphics were good, they were repetitive and uninteresting for the most part.
It seems that Castlevania has been in a big slump, lately. From what I've read, the most recent game, Curse of Darkness, received lukewarm reviews.....siting some many of the same problems that plagued LOI. You'd think that the series should be one of the heavy hitters in the world of videogames, since Count Dracula and the legacy of the Belmont clan have so much history.
Hopefully they can turn things around in the future.

Aria of Sorrow was the last one I played and I enjoyed it immensely. The silver bullet handgun fucking owns.
So, uh, I hate to say this, but I hate Symphony of the Night. I know, I know, it's blasphemy. But seriously, I can't get into it. The GBA game looks like it has better graphics to me, the PSX game was blurry as shit. Also it was impossibly difficult, I couldn't even get past the knight with the bird outside the castle. Freaking IMPOSSIBLE. I tried that part so many times in a row until I finally just gave up on the game and deleted it.
Basically, playing Aria of Sorrow first ruined it for me.

Me, I like Dawn of Sorrow, except for the part where there's a maze of walls that are invisible unless a ghost is flying in front of them.
That part was annoying as hell!

For which system was Aria of Sorrow?
I've got to say that I thought Symphony of the Night was actually pretty easy  And it actually got easier the further you got, since Alucard gains so many cool weapons and abilities.

Dawn of Sorrow is pretty awesome.
I also really enjoy Dracula's Curse and Simon's Quest. I'll also back Castlevania 64, just because I know no one else will show it any love.

Well, the original game was simply called Castlevania 64, so that one. The second game was basically just a mod with two extra characters and a few mini games. I haven't played the second game, and I've actually never seen the cartridge anywhere.

Super Castlevania IV, easily. It's the Castlevania game I keep going back to the most.
I have Castlevania 64. It's not a bad game, but it's not great. People expected too much out of it what with the Castlevania name and all.

Well, I'm playing through Dawn of Sorrow right now (I'll keep an eye out for those invisible walls) and it's pretty great, but if I had to choose, I'd go back to original Castlevania on the NES. It's harder than hell, and for some reason Dracula turns into a polar bear at the end, but that's the one that still gives me the warm fuzzies. Except, of course, any time a Medusa head pops up while I'm trying to make a jump. Yeah, you know what? Nuts to Castlevania I. Give me nonsensical puzzles in Simon's Quest any day. Or that little pirate hunchback in Castlevania III.

Really? I always preferred Sypha and Alucard as helpers. Sypha also taught me a valuable lesson about gender roles. See, I had assumed that the hooded wizard was a man, but then if you beat the game with her, you find out it's a chick. Then I felt bad about assuming that she was a dude. Then I totally fucked her.

I was just kidding about the pirate - he was easily the worst. I always went with Alucard and Sypha, although I did find Sypha's ending to be derivative of Metroid's. I mostly just stuck with whatever Belmont was in that game (Trevor?) and Alucard. Just because being a vampire is cool.

I read that Julius Mode was supposed to hearken back to Castlevania 3, with the characters in the DS game relating to the characters in that game.
Julius Belmont=Trevor Belmont (Edited, originally said Richter, falsely.)
Yoko Belnades=Sypha Belnades
Hammer=Grant DaNasty
Genya Arikado/Alucard=Alucard (duh)
Also, the invisible walls are only located in one secret area, underneath one of the fountain/statues of a woman in the village at the beginning of the game. The secret area joins with the Subterranean Hell area, and it houses some rare items. Also, it is the only place where the Homunculus enemy is, so you need to venture there to get the Homunculus soul.

I've thought about this for a couple days now and I think I have to go with Dawn of Sorrow. It took the overall gameplay of Symphony, the forging mechanic of Curse of Darkness and Aria of Sorrow's soul system and combined them into one. Plus it has a few cool touch screen features and giant-ass enemies that aren't bosses like the great armors and final armors. Not the first game to have those kinds of enemies, but still cool to have.
I was also thinking though that what they oughta do is update Symphony for the DS, sharpen the graphics a little maybe. Not like how they ruined Super Mario Allstars with updated graphics, but maybe make the 3-D effects a little cleaner, maybe add some new areas or something, new items.

Oh, hell yeah I had the Simon's Quest Worlds of Power book. I also had the Bionic Commando one in which you chopse your own adventure fighting against the forces of BADD.

I liked Aria of Sorrow. It had the most room for customization, which is something I like in a game.

Final Guard? The highest level of the large armor enemies? The one that looks like a gold plated king? The one that you do 1 damage per attack to no matter what you use? The one that seems like it has 30,000 HP and NEVER seems to drop its soul, at least on my Dawn of Sorrow game? Yeah, that one.
