My Wife has really gotten into Wii recently, and I'm looking to get some more games for her.
She has The New Super Mario, Sims 3, Epic Mickey, and DK.
She's not 11, and won't play something like "Barbie's Unicorn Queefing Adventure" So please don't recommend that.
She digs some RPG elements in games, like she loved Kingdom Hearts (mostly due to the Disney shit), and she likes the platformers.
Suggest me some games for her.

Sonic Colors and the Galaxy games are strong platformers, Lost In Shadow is too, and is a little bit easier.
Zack & Wiki, if you can find it, is a great game too. I don't know how to describe it... it's sort of a puzzle platformer, I guess. Each level is a puzzle with a solution, but you have to solve the puzzle in real-time, while dodging enemies.
Wario: Shake It is pretty great 2D platformer, and it has hand-drawn sprites.
A Boy & His Blob, also good.
Muramasa: The Demon Blade is a lot of fun, but might be too boyish for her.
Deadly Creatures is more action/adventure than platformer, but it is a highly rated game and one of the system's hidden gems.
De Blob was pretty fun, though the controls were a little loose.
Dokapon Kingdom is a fun multiplayer game if those playing don't mind the computer screwing them over... a lot.
The Tales of Symphonia sequel is about as good as you are gonna get for RPG on the Wii. It isn't the first game by a long shot, but still good.
If she doesn't mind violent games, Mad World and the No More Heroes games are a must.
I have heard good things about Endless Ocean, though it was never really my type of game.
The Harvest Moon and Rune Factory games are all decent to good. Still not Harvest Moon 64 though.
Sakura Wars: So Long, My Love is another RPG if she doesn't mind the LIPS part of it.
Super Paper Mario was kinda awesome, not too difficult either.

It's a beautiful game, and it's much longer than the original.
It's a lot more linear than the first one too, and lacks the open world exploration.
While Endless Ocean is quite nice, Endless Ocean 2 beats it in pretty much every way. It's definitely more of a game, while the first was more of an experience.
Little King's Story is one of the few that hasn't been mentioned yet that I'd really recommend, everyone else has mentioned all the other really good, somewhat more casual games on the system.

There's also the whole virtual console and WiiWare. She might want to check out And Yet It Moves, a puzzle platformer where you rotate what direction gravity pulls from.

I have that "A Boy and His Blob" and honestly, my game freezes every time I'm about to finish the first stage. I've never had problems with my Wii and the game plays fine on my friend's console, so I don't know what the hell is going on.

I'll second Symphonia II as a solid RPG. And of course, Twilight Princess.
Fragile Dreams has a great story and a shorter than most RPGs, which is arguably a good thing, as people who aren't super hardcore into RPGs often get bored before they end and never end up finishing them. Also, it's depressing.
Arc Rise Fantasia is a pretty standard JRPG, and is a decent option after Symphonia II.
Phantom Brave is fun if she likes Final Fantasy Tactics style combat.
