I forgot to mention just how fucking unbelievable the music is in Chrono Trigger, dare I say best soundtrack ever? I do.
They create so much mood and atmosphere that you can almost take it for granted. It almost pulls me into the game more than any other element (fortunately the story and characters are also fantastically compelling).
Lunar: The Silver Star on the Sega CD. I bought it used from Funcoland, the case was cracked, the CD was a little scratched and the manual smelled like perfume (still does actually) but I loved every second of that game.

As the one who started the FFVII thread I'd have to say that's my favorite of all time. It was the first RPG I ever played through and got me hooked on the genre. Since then I've gone back and played the previous Final Fantasy games and even the great Chrono Trigger and Secret of Mana.(only on emulators though) If had had played anyo f those games when I was younger I'd probably vote different but FFVII was my first love in the world of RPGS and I still get misty when Sephiroth kills Aeris.

It's not the greatest or most popular RPG, but I just might be the most fond of The 7th Saga, primarily for nostalgic reasons.

There are several kickass RPG soundtracks out there (Earthbound and Secret of Mana come to mind), but I would agree that Chrono Trigger just might be the best. That video didn't even include the Undersea Palace, Tyran Castle, or the Battle with Magus.

One of my friends growing up had a copy of it, I really enjoyed it as a kid.
I could say the awesome games that have already been mentioned, one I haven't seen though that I loved as a kid and still play about once a year or so is Shadowrun on SNES. I like the dark gritty "adult themed" SNES style of it.
I'm going to have to say that one Sonic RPG for the DS, seeing as how it's the only RPG I've beaten. I've tried FFVII and FFVIII but I don't have any PS1 memory cards so I could never get any farther than the first few levels. And those are my only other RPG's. I also don't really have the attention span for an RPG, as much as I want to play them. Anyone know an easy RPG I could use to "introduce" me to the genre?

I know this will sound favoritist, but Golden Sun. It has a good introduction on how to fight in it and what to do, without excluding the excellent puzzle-format or storyline. It's a definite win.

If you're looking for a general introduction into the genre any of the Final Fantasies or the first three Wild Arms would be a good start . If you're looking for something that is a little flashy and fun to watch I'd recommend one of the Shadow Hearts games. It's a good series and the gameplay is relatively easy to understand. The attacks are fluid and feel nice and solid when they connect. Characters and enemies alike change location depending on how they're hit, putting you at an advantage if you play your cards right. The judgment ring system allows you to play a roulette style mini game to judge the effectiveness of attacks and items, kind of like how skills worked on Sonic Chronicles.
If any of that interests you keep in mind that the first game in the series is a little more traditional in it's style but keeps the judgment ring system. Sorry to ramble on, I hope that helped.

Any of the Mario & Luigi games on GBA and the DS are great RPG's for beginners, as well as any of the console Mario RPG's like Thousand Year Door on the Gamecube.
Either FF Tactics for the PS1 or Skies of Arcadia for Dreamcast. The latter was just fucking nuts, especially the airship combat. I really wish I could get a hold of that again. I lucked into getting a RE: Code Veronica model Dreamcast for 60 bucks at Bookmans out here.
Edit: And 7th Saga? I borrowed it from a kid up the street but got frustrated and took it back. I played as the mutant or LUX and got my ass handed to me every time by Lejes or that fucking demon-looking bounty hunter dude. I finally beat it last year on rom, and it was about fucking time. Hard as shit. Good story, though.

Thanks guys, I'll be on the lookout for these games. I'm probably going to end up with the Mario one's as they seem to be the most liked of these so far. And are probably the most accessible too.

I played Lufia 1 on SNES but never owned it. So I never got that far in it. Never played Lufia 2. Was it really that good? Better than Fantasy VI and Chrono Trigger?
