I have tried to not get involved in a food forum discussion, however I had a valid food related topic.
Does anybody have any specialty dishes?
Something you make that friends or family request?
Here's the place to share them.
Knyte's Fucking Awesome Mashed Potatoes. (If you use this recipe, you have to call them by this name, or you with violate the terms of use.)
What you need:
A brick of Cream Cheese (Real name brand like Philly is best.)
A box of instant mashed potato flakes.
Homemade ranch (The powered mix is fine) or ranch bought from the deli.
Shredded Cheese. (I prefer mexican style 4 cheese.)
Garlic. (If you have to garlic salt is okay too.
Margerine.
Milk.
What you do.
First, make the ranch ahead of time, so it has time to thicken.
Next, make the Mashed Potatoes (I usually make the 8 serving size) per the instructions, with a slight difference.
Mix the water, salt, butter, and milk in the pan and bring to a boil. While the mix is heating, add in the cream cheese in small dabs. (Use a spoon and keep scooping it in, unitl it's all in there. It will melt with the rest of the mix.
Bring to a boil.
Remove from heat and then stir in the flakes with a whisk.
Next add 1-2 cups of shredded cheese and stir it in. (It will melt into the mix)
Add a cup of ranch into the mix and stir.
Finally, add garlic (or garlic salt) to taste.
Enjoy the world's best mashed potatoes.

I'll throw in here too. Here's a recipe for a creole-style seafood dip I found by mistake after seriously messing up a batch of jumbalaya.
It's gotten to the point where I just eyeball and nose these (hurr hurr), so it's hard to use exact measurements.
Ingredients:
Get a large container (around a half pound) of Crawfish meat. Doesn't matter if it's fresh/bagged/canned
3 green onions, chopped, both green and white parts
1 scallion, chopped, green and white parts
Paprika
Cayenne Pepper
Sea Salt
around 3 tbsps of chopped garlic (preferably fresh)
a stick of unsalted butter (If you use any kind of oil, I swear to god I will hunt you down and find you)
around a half-pint of heavy cream
First, cut the butter in half, and melt it into a pan placed over medium heat. When all melted, throw in the garlic, onions, and scallions, and let simmer for about one minute. Next, toss in the crayfish (can be substituted with baby shrimp or crab meat), and give it all a nice coating of paprika and sea salt, with just enough cayenne so that it doesn't really burn your mouth. Once the crayfish are all cooked, start slowly pouring in the heavy cream, as well as that final part of the butter. You want the crayfish to simmer in the butter and cream, and eventually soak about 95% of it all in, so don't go crazy with the cream. Once the crayfish are nice and tasty and there's a little but of the butter/cream left, pull the pan off the heat, and store the mixture in a room temperature container for about 10-15 minutes. Store the container in your refrigerator for a good hour or two until it's nice and solid. Serve as a dip with bagle chips or french bread.
(Note: If you absolutely MUST use crab meat, use a little more cream, as that stuff is like a sponge).

Never
I tried mixing up Cheeseburger Ramen. Just beef ramen, but with 2 packs of Easy Mac cheese powder to go with the beef flavoring powder.

Here is my recipe for cornbread stuffing from hell:
6 cups of crumbled cornbread
2 cups of sourdough bread
1 pound of spiced sausage
2 cups of diced onions
1 cup of diced bell peppers
2 large diced habanero peppers (jalapeno peppers if you are a pussy)
1 tbsp of oregeno
2 cups of chicken broth
1/2 tbsp sage
2 tbsp fennel pollen
1 tbsp cilantro
3 eggs
1 cup sour cream
1 1/2 cup of pine nuts
1 cup of raisins
12 tbsp of butter
1 tbsp honey
salt and pepper to taste
Melt 6 tbsps of butter in a pan over medium heat and saute the bell peppers, habanero peppers, and onions until they begin to brown. Mix that with the rest of the ingredients except the fennel pollen, honey, chicken broth, and the remaining butter. Mix them in a bowl by hand. It is important that the mixture be firm, but not too watery. Begin to add the chicken broth only as needed to keep the mixture moist, yet firm. Once all the ingredients are blended put the mixture in a baking dish. Mix the honey, fennel pollen, and butter in a small bowl until well blended. Spread the honey butter over the top of the mixture in the dish. Cover the dish with aluminum foil and cook for about a half hour at 350 degrees. After that take off the aluminum foil and cook an additional 20 minutes to lightly brown the top of the dish.

"We have never heard of a bigger one being served up anywhere else and we are challenging any big eaters to come along and finish one," he said. "If you can manage that then we'll give you a free can of diet coke but to tell the truth I'm not sure it's possible.
"I have never tried eating one myself but I'd struggle to finish one half the size."

I make some awesome ass Cajun Chicken Shrimp Alfredo.
2 cans of chicken breast.
1 bag of Shrimp
1 bottle of Ragu Cheesy Alfredo Sauce
1 lb of Fettucini
Some Cajun powder
Get a frying pan and melt about a tablespoon of butter on Medium heat.
Get a pot and boil the water.
Put the pasta in the water
Place the chicken and shrimp into the frying pan sprinkle cajun as you desire.
Cook and rotate the chicken and shrimp until the pasta is done.
Drain the pasta pour in the alfredo.
From here mix in some cajun until the alfredo has a brownish tint to it.
Mix in the chicken and shrimp stir and enjoy.

Anyway, a sweet quickie:
Make some small meatballs however you make them.
Next mix equal parts grape jelly and chili sauce in a sauce pan until blended.
Put meatballs in sauce.
Eat.

Okay, breadroll pizza.
Take a bread roll, slice it in half. Take a butter knife and cover both halves with ketchup. Now, cover all that with diced red onions, corn, red / yellow / green peppers, tabasco and other good toppings. Then get some mozzarella, cut it into thin strips, cover your roll and throw it into the oven.
Now, my oven has two heating apparati (apparatuses?) on both the "ceiling" and the "floor" of the oven, so the best possible setting is 5 minutes of heating with both active and ten minutes with just the top one. You don't want to burn the bread.
I'll post more of my delicious foodstuffs later.
