That is probably the most difficult question ever. If we are talking about the game we have played the most then its Street Fighter 2, mostly because the arcade is 4 feet from my bed.
My top 3 are:
1. Warcraft 2
2. Super Mario Kart
3. General Chaos

Any non-NT Warrior Megaman game ever. Those aren't my favorite games ever (My favorite games are all RPGs of some sort) but I still play them for the kicks.
Oh yeah, practically any arcade NES game goes for me.
I almost forgot about Indycar Racing 2. So easy it is to customize it, so fun to play without getting bored at any minute during a 2-hour long race.

The C64 version of Pirates!, easily. 22 years have passed since it came out and I've played thousands of games (including later renditions of Pirates!), but this is still the king of the mountain.

Douche and Syd have two very good choices.
My favorite game is Super Mario Galaxy. However since Galaxy is a newer game, I'll mention that my favorite game prior to it was Final Fantasy IV for the SNES. Fuck the DS version (as per other discussions).
