Double Dash > Super Mario Kart > DS > 64 > Super Circuit > Wii
I liked the concept behind DD, if it was re-released or re-visited with online play on the Wii, it would be a clear winner.

How is this even a question??
Unless your a total fucking n00b, MK64 is the only answer. The multiplayer is incredible, and once you get real good there is no way that the uninitiated can even really compete.
Its very hardcore, and that's how I like my Nintendo damnit.
I am a big fan of the original, however its only 2P. I liked double dash until people broke it (and the DS version*) with snaking. The Wii version is fun and polished but too n00b friendly (fucking blue shell fest ALLLLLLLLLLLL DAY).

Actually it is a good question, Although I love MK64, my favorite is definitely Super Mario Kart. Granted the multi-player modes are better on the 64 mostly due to the fact you can have 4 players, but I still like the racing aspect better on the original game.

Good Lord! Are you actually asking me to vote for one? I like them all the same, thank you very much.

Well, I don't play multiplayer very often, but I'd say Wii's single player is more hardcore since I have yet to attain three star status and I've beaten mirror mode in MK64 3 times.
and what the hell is snaking?

I do enjoy the single player experience on the Wii, like I said its highly polished and alot of fun. However, what Mariokart really boils down to is the multiplayer and there is just too much rubber banding to make it a truly balanced racer.
And as for snaking, I ripped this from gamefaqs.

Constant drift boosting to either side repeatedly. This will allow you (or whoever is "snaking") to gain an unnecessary speed advantage against people who are racing regularly. (not snaking)
Players who can snake good enough can almost go in a straight line while gaining the extra speed.
This is generally frowned upon within the Mario Kart DS community.
I really hate the graphical style of MK64, sure it has great multiplayer, but 2D against 3D environments? No thank you, snobbish? Yes, but that's how I see it, and snaking is fully optional, so unless your friends are elitists, than I don't see how it's a bad thing. Even then, that's just your friend(s) being an asshole, alot of games have some kind of "cheap" strategy, in some fighting games people could play as a boss character/gamebreaker and get the same treatment, and in all racing games there could be shortcuts, cars/characters that are just plain more powerful, choosing tracks you aren't good on, etc.
So yeah.

I see where your going with this, but all I really have to say is I LOVE the 64 engine. When I play that game I am one with the controller and I make every turn my bitch. I also have the most memories tied into the 64 version.
The look is very dated , but I really kinda like that look, I suppose it has a nostalgia appeal to me.
I'm gonna have to go with Double Dash on this one. It's one of the first games I played for GC and one of the few games out of the ones I've own(ed) that I've actually beaten.

For what its worth, I loved Super Circuit, it plays sooo well on the GBA.
It is essentially a direct sequel to Super Mario Kart in terms of gameplay and presentation, I am surprised I am not seeing more love for it.
