I'll repeat what others say: Start from the older stuff, then work your way up to the newer, with some exceptions like:

If you're gonna watch Mobile Suit Gundam, grab the 3 movies-- the original TV series got fucked and filler'd up due to it's rocky run on Japanese TV back then. I'll second the three OVA's (0080, 0083, 08th MS Team) and Wing. Look into the sequels of the original timeline (Z Gundam, ZZ Gundam, Char's Counterattack, F91, and V Gundam if you liked the aforementioned shows). All brilliant space operas. G Gundam is good if you like absurdly insane, almost super robots (SHIIIINIIIING FINGAHHHHHH!!!111one) Oh, and try Gundam SEED too.
Even if you watched it in Robotech, watch Macross (specifically the movie Do You Remember Love?, prequel Macross Zero, and sequels Macross Plus, 7 (if you become a real fan) and Frontier, the most recent one.)
Mazinger Z and Getter Robo (specifically Getter Robo Armageddon) are good watching if you want. They are the "El Papas" of all mecha anime, including the shows y'all loved as little ones like Voltron (Golion =p).
DBZ only made sense to me when I was a kid, and I like Bleach, but yes, they are highly stereotypical of anime and I second the notion that you should stay away from them and most other shonen shows (like Naruto, sorry guys). Rurouni Kenshin/Samurai X and Yu Yu Hakusho are kinda exempt from this rule though, because they're that good.
Also, Gun X Sword. EVERYBODY should watch Gun X Sword. If only for it having one of best dubs in anime. Ever. It also has a plot that does stuff like super robot shows, Cowboy Bebop, and Trigun better than the originals (though you should still watch them anyway.)
Last Exile is pretty great too, and has some beautiful animation to boot.
Oh, and Tekkaman Blade. Just Tekkaman Blade.
It's also a shame that Serial Experiments Lain, Record of Lodoss War, and Slayers (which will be 10 times better for you if you are a fan of RPGs, D&D, etc.) weren't mentioned in here.
Other than that, there's not much I can recommend that others have already.
One more thing: Leave all those slice-of-life/other stuff for later. (with the exception of Azumanga Daioh and The Melancholy of Haruhi Suzumiya, which'd also be fun to watch with your girlfriend/wife/other half/whatever.) If morbid curiosity still strikes you, then go with Lucky Star (as mentioned), Air, Kanon, Clannad, all that stuff.
