Very cool post.
In terms of FPS, it may be boring, but my very favorite FPS weapon is easily the M-4 with attached M203 grenade launcher from CoD4. Basic hand grenades, and especially flashbangs, in that game are pretty damn fun too. There isn't a ton of opportunity for it in the frentic pace of that game, but ambushing some poor bastard with a field of claymore mines is seriously good times too.
For more exotic weapons...the Silver Sword from the original FF has a place close to my heart, because of the ridiculous effort it took to save up that 4k the first time. And the power jump was just inane--I got high on being able to one-hit kill ogres for several days after finally getting my hands on one.
From Gun, I love the Winchester rifle/dual wielded Colt 45s. Both are awesome, although since I'm much more a rifle than handgun person, I personally favor the Winchester.
I know there are others, but I'll post them later when I get home and have more time to think about it.

Combined with the Geo-Mod technology, I loved the Red Faction rocket launchers because they allowed you to tunnel. I also loved the heat sensored laser rifle in the game as well because you could literally just burrow yourself in a hole with the rocket launcher and then sit in there and shoot through walls until someone hurled a nade down with you.
Also, throwing knife battles in Goldeneye never got old.
