Ones that are put in compilations all the time and you find yourself wanting to play them occasionally alot. My favorites are Galaga, Rally-X, Sinistar, and Asteroids.

I remember when Double Dragon was king of my arcade...then it was dethroned by Bad Dudes, with its one-hit-one-kill ninja hordes. I wonder why that was..

A funny note about Double Dragon.....on Xbox arcade, you actually get achievement points for jumping over that bridge in the woods stage without falling into the water. I've never successfully done it.

Well, this is from Sega alone, and in parentheses i put what compilations they were in.
Golden Axe (Plug and Play, Genesis Collection, SEGA AGES)
Columns (Genesis Collection (?))
Comix Zone (Was in Sonic Mega Collection Plus and maybe the Genesis collection)
The Ooze (Just unlocked it on SMC+, I love the strategic gameplay of having a blob who has advantages with all sizes)
Sonic 3 & Knuckles (As if ti wasn't glaringly obvious)
Shinobi 3 (Genesis collection)
Kid Chameleon (plug and play thingy)

Dunno if it counts as old, since it was made around 1996 or so, but it was a shooter called Ocean Hunters. You'd shoot aquatic cryptids for money. Really fun. Problem was, it was really rare, and I only ever found two of them (In Las Vegas and, luckily enough, my local theater)

When I was really young, the local bowling alley had Star Wars and Crystal Castles, both of which were my introduction to arcade games.
