I don't have a Ph.D in polls, but shouldn't the poll be relevant to the thread title?, or is your poll asking who's fatality is better between Scorpion and Sub-zero? or are you asking who is better in general? Why doesn't your poll list some of the top fatalities?
So many poll questions unanswered. I want these answers in the form of a 1000 word essay on my desk tomorrow morning.

Well, although he's not my favorite character (that would be Raiden), Liu Kang's dragon-transformation fatality was always the one I liked best.

The Kombat Tomb stage Fatality From MK II is da best, especially when you time it so the guy slides off the spikes. Then it would have to be Jax's arm rip fatalitie. The spurting blood is total win.

MKII:
Baraka's impalement fatality
Johnny Cage's triple-uppercut fatality
Liu Kang's morph-into-a-dragon-and-eat-your-torso fatality
MKIII:
Reptile's eat-your-body-parts fatality
Cyrax's blow-up-the-earth fatality
It's really a shame that my favorite character from the first four MK games, Sonya Blade, didn't have any spectacular fatalities.

Sub-Zero's spine-straightening. Whatever game it appears in, it's the best of the bunch and all other fatalities are for girls. If you want to challenge me on that, well, I shall sing a song to tell you what's going to happen.
