This is a topic where people discuss what parts of a game they like the best. Graphics, scoring systems, puzzle solving, headshots, etc.
1) I like games that cause the most aesthetic mayhem.
ex. I like Super Mario Strikers as my favorite sports game because I like seeing shells flying, Bowser rolling and flame-breathing, big knockdowns, super charged slowmotion neon green ball paths, etc. And it's got 4-player co-op. I don't like NBA 2K13 games because they look extremely boring to me and are not farsical.
I like the Senko No Ronde games because 1 v 1 battle of shooting colorful energy balls, lasers, explosives, etc. filling the entire screen. The anime cut-in picture + sfx that appear when you do a special move is greatly appealing as well.
2) I also likes games that have great character maneuverings control.
ex. I like Super Mario Sunshine, Vanquish, Gunstar Heroes, etc.
So aesthetic mayhem + awesome character maneuvering games are what I am drawn to. And when a game that meets the above criteria ends up challenging my skills so that I have a purpose in master the game, that is perfection.

I like games that have a good create-a-character feature. I like having a lot of options for customization, and a lot of control over as many aspects of the character as possible.
Applies to RPG's, sports games, whatever.

I feel like I have been the most OCD when it comes to sports games with RPG elements. For example, embarassingly I will quit and restart a saved franchise in NHL14 if my player don't produce the way they should over 6-10 games. You're a 90 overall, fuck you, score like you should I didn't trade for your ass for nothing

Me too. It took me a long long time to get used to games that let you act out freely (like Skyrim or GTA). I used to never touch any of those games.
I like well written characters.
A coherent kinda homogenic universe, like in Catherine or SoTC.
I like spectacular visuals and effects.
Good music.
Games that are eay accessable.
Poetry.
A glass of Scotch.
And my dog Baxter of course.

Control is important to me when it comes to games I enjoy. Tight controls like in series such as Mega Man, Mario, Castlevania (mainly the metroidvanias here) really add to the overall enjoyment and make the games easy to come back to.
Atmosphere (visually) is also important. Games like Super Metroid, Metroid Prime, some Resident Evil games and some of the Fallout games have a great dark atmosphere, but not so dark and drab that it brings the games down. Games with a lighthearted atmosphere on the other end of the spectrum, like the many Mario games, Wind Waker and others I won't bother listing but you get the idea.
Music/sound effects are also a big factor. This kind of goes with the whole atmosphere bit as well, because if the music and sound effects don't match the visuals, it brings the whole experience down. Sometimes you can have bits that lack (think voice work in games like SOTN and Resident Evil) a high quality but manage to add to the charm of the game and not detract too much from the overall atmosphere to make the experience negative.
Story can be important, depending on the game and genre. This is most important in RPG's. Some FPS/TPS games and action/adventure games also need a good story to be interesting, as these genres are overloaded with games and you really need something special to stand out.
Customization can be important to me in RPG's, but it is not a deal breaker. I also tend to enjoy RPGs where you can wander the world and do all sorts of shit that isn't part of the main narrative.
Overall, I would have to say that the game has to be good. It's all relative, of course. I enjoy plenty of games that are generally disliked just because of my sense of humor. I would bet that this is the case for many gamers.
