How about a completely original film not based on anything or remaking anything, and that relies on great acting and story rather than popular names and special effects...... No wait that's stupid. How about a sequel to the Super Mario Bros. Movie.

You ask for that, but when people make that type of movie the vast majority of audiences (not critics) say it sucks. Be careful what you ask for.
I don't see what's wrong with special effects. I go to movies to be entertained. I like them to be coupled with an entertaining story, obviously, but special effects often enhance the experience.

I don't have a problem with special effects as an enhancer, I have a problem with movies that are nothing but special effects. These are films like the star wars prequels and transformers movies. Although I will admit that even special effects when a practical effect could be used bother me in the average film. It seems like the always stick out as clearly digital to me when I have seen the effect done without using computers.

I'm actually pretty excited about the future of CGI. Recent pixar and dreamworks films look so fantastic texture and animation wise, that I can only dream about the possibilities the technology will lend to future storytelling. By the time I am in a position where a significant budget is made available to me, I hope computer animation will be more accessible as an artistic tool. A well focused team with a strong director and control over photo realistic CGI could create a film experience far beyond anything we have seen before. Just sayin.

I want more movies like Man on Fire (2004). It may not be the greatest movie ever, but I think the general techniques used were quite excellent.
If you haven't seen the movie, I recommend it.
