First, I've never used Skype. If anyone has, is there a tutorial to figuring it out that someone like me can look at to figure it out?
I need to know this for the second part. I'm going to need to use it to record phone calls from it. This too, would be handy to have some kind of walk-through, especially for a piece of technology I've never used before.
Does anyone here have any experience with Skype, or recording with it?

pretty simple, just DL, install, set up username and then adjust settings, such as message notifications, chat/call options and setting up your mic, by going to tools < options:
If you have a webcam like I do, you can use that as your designated mic:
there will be a "Test call" in your contact list, so you are sure your mic works properly. once that's all done, you're pretty much set
For something a little more detailed than that, use the skype guides: http://www.skype.com/help/guides/
as for the recording, you'd have to wait for someone else to answer that, I just record through my webcam

Pretty much yeah. But if you have the person's permission, then you can just record Skype like you would any other sound that comes from your PC. Just Google for "PC sound recording" or something and you'll find millions of programs that can record right to MP3.

Yeah, I don't know about the legal stuff, but in my Arabic class we use Skype to record conversations between two students and email them to our teacher as homework, so it can definitely be done and its pretty easy.

Is it really that easy SoldierHawk?
I'd be using it to do an interview. One where geographically, it'd be tough to do without huge phone charges.

I've got Skype. For recording, all you have to do is google Skype recorder. Find one you like and then torrent the full version.
I don't use those, though. I've got camtasia so I just record the video AND sound and split into just a mp3 if need be,
