Everyone has a game or two that they played the shit out of and never finished, either out of boredom, difficulty or just forgot about it. I'm positive there are tons I played and never finished, but for now I'll mentally go through some in my head and then it's your turn, forum members.
NES
Megaman 4 through 6 - I just lost interest in these games after 3.
Nightmare on Elm Street - I simply got bored with this one, but the music rocked.
Faxanadu - I watched my dad beat this one, but for some reason I never did.
Double Dragon 3 - I just hated it.
SNES
Secret of Evermore - It was stolen out of my backpack in school!
Jurassic Park - The FPS segments would rot your eyes. Good music though.
Super R-Type - Frustrated me till I cried and urinated blood.
PC
Lost Vikings - Such a fun game, though I'm not sure if it was suppose to end or not.
Ultima VII - Goddamn this game was long, and I sucked at it. But I loved it.
Wing Commander 3 - Mark Hamil with a 5 o clock shadow kicks Kilrathi ass.
Myst - It's like a slide show with bitmaps instead of actual photos. Boring.
Alone in the Dark - Good game but I lost interest after a couple hours.
Riven - It's like a boring slide show with disc swapping every 16 seconds.
Like I said, there are tons more but these are the only ones that stick out. I may make it my goal to go out and actually try and beat these games. Except Myst. Myst can sit on it.

I started Suikoden V and to this date I haven't beaten it. I've gotten to the end, but since I didn't get all 108 I started over and attempted to get them all. Then when things got busy, I just kind of dropped it altogether.

oh god. i have so many of these. the last game i beat was WCIII + the expand on the PC. i beat 2 of the halos and the 3rd one i saw my nephew beat. but i have a fuckton of these. ill list when i get home

Punch-Out!! Featuring Mr. Dream. Funny how I managed to TKO Mike Tyson on my very second try, but still have yet to do it to Mr. Dream in over two years, since they're THE SAME FUCKING CHARACTER.

Final Fantasy X is the big one for me. The thing is, I'm such a damn completest that I refuse to go after the very final boss until I have absolutely all the special items in the game, and my armor crafted just the way I want it. Anyone who's played FFX knows what a foolish goal this is. I've restarted it dozens of times, and every single time I end up stuck just after beating Seymor's final form in Sin. This has been going on for like five years now, just because I can't go forward until I beat that motherfucking Chocobo Race and find all those ^&@#$^& blue butterflies. Fuck you, Square Enix.
There are probably some NES ones too, but I can't think of one off the top of my head. I'll add more later.

Sunshine is fantastic. I beat it. I planned to get all the Shine Sprites in the game, but eventually gave up. Fucking Blue Coins!

I got to Seymor on the mountain and I just said fuck it... You needed to use the blue wolf guy, while the whole time my party was mostly Tidus, Auron and Lulu, to throw him in there I just gave up.
On final fantasy, I gave up FFV and FFVI only because of time constraints with work. Though I religiously beat FFI on my NES every christmas, sort of a tradition since we got that game back in 1990 on christmas day.
Also, Rainbow Six Vegas and G.R.A.W. one and two.

Same here. I was all excited when I bought the game last year and played it for a while, but just lost interest. There's so fucking much to do in that game. Fucking Jinjos.

I loved the game....I got really pissed off at a certain level where you had to paint the entire ground in certain amount of time (a beach level i think) and I went fucking crazy and haven't played since...hmmmmmm...

Its so interesting how everyone here loved Mario Sunshine. Never played it myself, but based on what I'd read, it always sounded like the redhead stepchild of the Mario franchise. Now I may have to reconsider my impression.

It has a 91.51% composite score on GameRankings and a 92 composite score on Metacritic.

It took me about 7-8 years to beat FFX, even longer with Final Fantasy for NES...
I ended up devoting the last 2 weeks of my senior year to beating them both, as a goal before I graduated since not beating those always haunted me a bit...
Other then that, I have yet to beat FFXII, RE5, Twilight Princess and countless PC games...

i never completed sunshine 100%. which is weird since i have completed every other game 100% in the mario series (except for galaxy, i never bothered to try to beat the game w/luigi). i beat the game, but never to go back for the rest of the crap.
i never completed DK64 either. i only rented the game, but i got pretty close. unfortunately, i was trying to do the game 100% instead of just playing straight thru, but since that game was ginormous, i never got around to the end

Conker was a lot more linear. BK2 is fucking annoying. You CONSTANTLY go back and forth between levels. Oh! You learned a new move! Now you can go activate that thing back in that other level! And then you get sometimes you can use in ANOTHER level. It was annoying as hell.
RPGs are very prolific here.
-Final Fantasy V and IX, the former because I lost the first save and I can't bring up the enthusiasm to battle the atomos tower again, and the latter because there are too many instances where not having the game guide will lose you the item or whatnot forever.
-Suikoden II because I am a big fat vagina and I can't go on without saving the life of the main characters sister.
-Dragon Quest 8, because that game is too fucking long for what it has to offer.
-Yakuza 2. Once again, haunted and halted by bullshit sidequests where you need the guide to win, and the caberet club, which is stupid.
-Shadow Hearts: From the New World, where I have literally stopped right before the final boss who I know I can beat, because I can't seem to summon the enthusiasm to play it again.

Don't bother, it was not worth the effort. All I got was a lousy picture I could post to peoples Wii's gloating about how I have more patience playing as Ice Skates Luigi then anyone else.
I always get to the final level of Skate or Die 2 and quit.

Deus Ex - lost a save game
Doom/all games you can play on Skulltag - I beat Strife with iddqd on, but it's not legit. Also, I was too occupied with map packs to beat the games.
Fable - similar reason for System Shock 2.
Will add more when I'm on PC.

I didn't beat Ocarina until a few years ago because my sister deleted my original save file when she was like 5 or 6, and I didn't feel like starting from the beginning.
I never beat TimeSplitters: Future Perfect. Completed most of the challenges, never finished the main game.
