Engines like that are built to enhance capabilities and graphical power trying to reach to the next level of the "ooooh aint that prudy" to make us spend more upgrading our systems. The Wii has no real power to speak of for the oooh factor that they shoot for.

You had me until that part. That argument only applies to the PC, not the 360 or the PS3. On the PS3 and the 360, the Unreal Engine exists only as a coding base. You can't upgrade your console hardware like you can on a PC, so that argument is moot.
The problem here is that the Wii needs a build of the Unreal Engine to be able to run certain games and when you have Midway saying that they'd love to bring MK vs. DC to the Wii but they can't because it runs of the Unreal Engine and an official build of the Unreal Engine doesn't exist for it, well then there's a problem. An unofficial version exists for the Wii, so an official version would be possible, a version which would open the floodgates for the Wii in terms of crossplatform releases. Given the sales numbers for the Wii, it would certainly be a smart business for the Unreal team to release an official build of the engine for the Wii. The fact that they haven't, despite the fact that the system has vastly outsold the PS3, suggests a certain level of irrational fanboyism on their part.
