I'd have to say a toss up between Aliens, Big Trouble in Little China, or Rain Man. I'm talking of course about movie quality, not a cliche stereotype of the eighties like Ferris Bueller, but an actual good movie that you grew up watching many times.

Ferris Bueller is an actual good movie that many people grew up watching hundreds of times. In fact, I'd say more people identify the 80s with Ferris Bueller than any other movie.
Not me though. Personally I like Sixteen Candles as my quintescential 80s movie.
But if you're talking brilliant quality, multiple viewings, and holds up today as one of the best movies ever made, then it can only be Back to the Future.

I'm not saying Ferris Bueller was terrible, I actually found it quite entertaining. However I can't exactly regard it as a 'great movie'. Back to the Future was great. It's probably in my top ten.

Ghost Busters and Back to the Future, for quality and replayability.
For 80's culture, I go with Fast Times at Ridgemont High, Valley Girl and Revenge of the Nerds.
Also honorable mentions on quality: Pee Wee's Big Adventure, Beetlejuice and Blue Velvet.

I'd have to say 'anything' with Arnold is a bit of a stretch. Terminator and Conan the Barbarian (NOT the Destroyer) were classics, however the rest of them fell more into the 'fun but not great' category.

I like nearly comedy and action movie mentioned so far. Another one I always have to stop and watch if I come across it is WarGames.
